Named after the city of Gouda in the Netherlands. Is is a firm, semi-cooked cheese with a smooth texture, thin rind, and regular small eyes. Its flavor is mild and slightly sweet, with hazelnut notes. It can be enjoyed in chunks, paired with a fine red wine.
